More of the preping that I am in charge of in the Butcher shop.

There are 2 assistant butchers, here we are cutting NY Strips, Beef strips for Fajitas and
me Beef Filet Mignon for 2,400 passengers a week

This is a Ellier one of the assistant butchers on staff this day! Triming the tenderloins for me to cut.

These are 1/2 pound filets freshly cut by me for all the specialty restaurants, the Jefferson Bistro,
Lazy J's Steak House, Teppanyaki, East meets West and Little Italy.

Just Starting to cut the filets and along way to go in the butcher shop, my position is to cut meats to precision portion sizes

My dinner with out the plate garnish from Little Italy Restaurant by me a Filet Mignon, Lasagna bolognesa and
shrimp Alfredo Combination plate.
